Close your eyes just a fraction, squint a little, take a good look at the 2008 Honda CBR600RR and you could be forgiven for thinking you were looking at Nicky Hayden’s MotoGP bike. The same clean lines, beefy swing arm and sharp profile adorn both motorcycles. Dual Stage Fuel Injection, Pro-Link rear suspension and HESD electronic steering damper, drool drool. Honda make no bones about the fact that MotoGP is where they test designs for their new bikes and it shows. Whether you can ride one as quickly as Nicky is another matter, but feel free to try. I ride mine as fast as Nicky Hayden.

Lasagne al forno – cooking made easy
As far as I am concerned, this is the ultimate pasta dish. This recipe is for a traditional lasagna with Bolognese and béchamel sauce. There are hundreds of other ways of making Lasagna, but this is the starting point that all other recipes come from.
Although it is an easy recipe, it does take some time, because there are several separate stages to go through. Both the Bolognese and the béchamel sauces must be made separately and the pasta must be cooked, although nowadays there are many ready –to-go sheets of pasta that do not need pre-cooking. For me, it is worth the extra few minutes becaue I have found the ready made sheets dry out and if you take the time to pre cook them, they absorb the flavors of the sauces better. You can use white pasta as I have done for this one, or you can use green spinach lasagna sheets for a different look and flavor.
Traditional Roast Turkey with Pork, Sage and Onion stuffing

Roasting a turkey is very simple. Many people have been persuaded away from the traditional way of roasting a turkey, but I still think this is the best way to do it. I know it is slightly faster to cook the bird with no stuffing in and many people now buy a ready-made stuffing in a box that just requires water being added. I have tried all the ready made stuffing and do not recommend them. Cooking a turkey in this way is an all day event. If possible involve the whole family. If you are cooking for a large group of family and friends, there is a lot of work to do. Kids will love to help peel the potatoes. (Or not.)

This recipe takes a little extra effort but guarantees results. How many times have you sat down to a Thanksgiving turkey that was dry and tasteless? No more. For this recipe, it is important to use Italian rice; Arborio is probably the most well known, but Carnaroli or Vialone Nano are good too. This is a very simple recipe but it does need a lot of stirring, particularly towards the end of the cooking time as the rice absorbs the liquids. This can be served as a main dish, but also makes a great accompaniment to Ossobuco. If you have a paella dish, that’s the best way of cooking this dish, if not, a large heavy bottomed frying pan will work just fine.
There are many variations of this recipe, but this is a very simple version. If you can find veal stock, that would be best but beef or chicken stock works well too. Most people spoil this recipe by adding the cheese too early. I prefer to add the cheese right within the last few minutes of cooking. Good advice.
